Yesterday we celebrated my Dad's Birthday! We went to Longhorn Steak house for dinner and then some of the family came back to my house for a Peanut Butter Chocolate Chip Cookie Cake!! YUM! What's that? You wanna know how to make it, you say? Ok!
I got this recipe from my lovely sister in law, Nicole. :)
Ingredients:
1 cup brown sugar
1 cup sugar
1 cup butter (2 sticks)
1 cup peanut butter
2 eggs
1 tsp vanilla
2 cups flour
1 tsp baking soda
12 oz milk choc. chips (or favorite)*
12 oz peanut butter chips*
*(actually the original recipe only calls for 1/2 a bag of each, but I like to add them ALL :))
First, melt the butter. Then mix brown sugar, regular sugar, and peanut butter in.
add eggs and vanilla. mix well.
should be nice and creamy.
add flour and baking soda. mix just until blended.
should have more of a cookie texture now.
now mix in chocolate chips and peanut butter chips.
and now you have your cookie dough!
don't forget to spray your pans before putting the dough in.
put half of the dough in one pan and half of it in the other.
bake at 350 for 25 minutes until the tops are golden.
Play with a silly puppy while you wait.

Cream Cheese Icing:
Ingredients:
1 (8oz) pkg of cream cheese
1/2 stick butter
1 1/2 cups powdered sugar
1 tsp. vanilla
Soften cream cheese in microwave if needed. Add vanilla to it first.
then add the butter.
and last add the powdered sugar, and mix well. If needed you can thin with milk, but this recipe is so great you probably won't need to. :)
frost the first cake on the top. put the second cake on. and frost that top.
and if you mess up the cake as your putting it on the top, frost all around to hide the cracks. :)
admire your frosting job!

give it to the birthday dad.
and give the dad a hug. :)
